Ingredients

  • 1/2 cup flour
  • 5 Tbsp. cocoa powder
  • 1/2 tsp. baking powder
  • 4 egg whites
  • 3/4 cup sugar
  • 3 Tbsp. skim milk
  • 1 tsp. vanilla extract
  • 1 Tbsp. instant coffee
  • 1 Tbsp. hot water

Preparation

  1. Preheat oven to 300º F
  2. Mix cocoa, flour and baking powder in a bowl.
  3. In a separate bowl, beat egg whites until frothy.
  4. Add cream of tartara nd continue to beat.
  5. Slowly add sugar, one tablespoon at a time.
  6. Add milk, vanilla extract, several drops at a time.
  7. Dissolve instant coffee in the hot water and slowly add to egg whites while beating.
  8. Continue beating until mixture is glossy and forms peaks.
  9. Fold into flour mixture.
  10. Pour into an 8×8 inch nonstick baking pan. Bake for 35 minutes.
